Confetti Sweet and Sour Slaw

This is a Carlos Favorite.

Ingredients:

2 large red cabbage, shredded (9 cups)

2 pounds carrots, shredded (3 cups)

4 red or yellow bell peppers, cut into thin strips

2 small purple onions, cut into thin strips

2 celery ribs, sliced

1 cup golden raisins

1 cup apple cider vinegar

1/2 cup vegetable oil

1/2 cup honey

2 teaspoons lemon juice

1 teaspoon salt

1/4 teaspoon pepper

Instructions:

Combine first 6 ingredients into a large bowl or heavy duty zip-top plastic bag

Combine vinegar and next 5 ingredients in a jar; cover tightly, and shake vigorously. Pour over cabbage mixture, tossing to coat. Cover or seal, and chill.

As an added perk, I sometimes add candied ginger to it;)

Since my husband loves coleslaw… I’m always looking for a good twist.  I have another one  I really LOVE that is quick~quick! It is thinly sliced green cabbage with spring onions cut on the diagonal and seasoned with olive oil and lemon juice and a tad of red wine vinegar and then tossed with chunks of Feta cheese! So quick and delicious!  More to my mediterranean palate, too. I will post that one another time….
