Cuban Mojo Dry Rub – from Whole Foods* -a great short cut!
Cooked at 400 degrees for 30 minutes = 2 loins 2.79 lbs.
Boom! Done!
145 degrees perfect 🙂
Ok, for the details: leave your tenderloin out while the oven is pre-heating and add (rub) the seasoning well… drizzle with Good olive oil and pop it in the oven when the temperature registers 400….take it out, when the timer goes off but check it with the thermometer so it registers at least 140 degrees- but I prefer it at 145, (yes, it still has a slightly pink center). Always let the meat rest for 10 minutes so – you don’t want all the wonderful juices to run out!

*Ingredients: Organic Dehydrated Garlic and Onion, Sea Salt, Organic Sugar, Organic Spices ( that has to be Cumin & Oregano!?)
